Eco-Brewery Tonic Spruce is an organic, Swedish tonic flavoured with freshly picked spruce shoots which gives it a fresh and subtle spicy tone.
Instead of using quinine, Ekobryggeriet uses natural aroma from Quassia, which is another type of bitter wood plant and was originally used as a protection against malaria mosquitoes in South America.

150ml Paper Lantern Gin
250ml Rosso Vermouth
250ml Campari
750ml Prosecco
1. Build all the ingredients in an ice-filled jug. Stir gently to prevent over dilution.
2. Garnish each glass with orange peel.

60ml Paper Lantern Gin
30ml freshly squeezed lime juice
20ml lychee syrup (from can)
90ml chilled strong brew herbal tea*** (lemongrass & pandan/peppermint/forest berry)
Method
1) Combine in a tall glass
2) Add crushed ice
3) Churn with a spoon to mix and chill
4) Top with more crushed ice
5) Garnish with a lime wheel, lychee (or other appropriate fruit) and mint sprig

5ml Paper Lantern Gin
20ml TWG Tea Red Christmas Tea syrup*
20ml fresh lemon juice
30ml champagne/sparkling wine
1. Add all the ingredients except for the champagne/sparkling wine to a shaker with ice and shake.
2. Fine strain into a chilled glass. Top up with champagne or sparkling wine.
3. Garnish with rosemary.
**TWG Tea Red Christmas Syrup
1. Add 200 ml of hot water to 10 grams of tea.
2. Let sit for 15 minutes.
3. Strain tea and add equal amounts of sugar (200 grams) to tea.
4. Stir until dissolved. The syrup will be good for up to 4 weeks in the refrigerator.

Berry Bramble
60ml Paper Lantern Gin
30ml lemon juice, freshly squeezed
15ml sugar syrup
30ml berry purée, sweetened*
Garnish: fresh strawberries and blackberries
In a cocktail shaker filled with ice, combine Paper Lantern Gin, sugar syrup and lemon juice. Shake vigorously, then strain into a glass filled with crushed ice. Top with the berry purée and garnish with berries, to serve.
*For the berry purée:
In a blender, blitz mixed berries, lemon juice and a few teaspoons of sugar (to taste) until liquefied.

15ml Campari
15ml Sweet Vermouth
Add 45 ml of Paper Lantern Gin and 1.5 teaspoons of tea into a jar. Insert jar into a bowl of boiling hot water and let it steep for 15 minutes. Strain the infused Paper Lantern Gin and tea mixture into a mixing glass or straight to your preferred rock glass. Add Campari, Sweet Vermouth, and ice. Stir 15 times to prevent dilution. Garnish with orange peel.

45ml Paper Lantern Gin
10ml Mathilde de Peche
30ml fresh pineapple juice
20ml fresh grapefruit juice
10ml simple syrup

1) Fill a collins glass with ice and chill in the freezer
2) Combine all ingredients in a mixing glass
3) Pour into a chilled collins glass

Early Grey French 75
45ml of Paper Lantern Gin
Earl Grey Tea
15ml simple syrup
15ml lemon juice
Prosecco/Champagne top-up
Add 45 ml of gin and 1.5 teaspoons of tea into a jar. Insert jar into a bowl of boiling hot water and let steep for 15 minutes
Strain the infused gin and tea mixture into a cocktail shaker.
Add simple syrup and lemon juice into a cocktail shaker filled with ice.
Shake well and strain into a champagne flute
Top up with Prosecco/Champagne
Garnish with lemon peel

60ml of Paper Lantern Gin
Earl Grey tea
2 raspberries
2 lime wedges
15ml simple syrup
Add 60ml of gin and 1.5 teaspoons of tea into a jar. Insert jar into a bowl of boiling hot water and let steep for 15 minutes
Add raspberries, lime wedges and simple syrup into the cocktail shaker and muddle
Strain the infused gin and tea mixture into a cocktail shaker then add ice
Shake and strain into a rocks glass filled with ice

Cucumber Cooler
45ml Paper Lantern Gin
25ml cucumber Juice
20ml Bianco Vermouth
15ml simple syrup*
20ml fresh lemon juice
15ml Maraschino Liqueur
Garnish: Lemon wedge, cucumber swirl, cherry through a stick
Method
Add Paper Lantern Gin, Bianco Vermouth and Maraschino Liqueur over ice to a Hurricane glass
Then add the simple syrup, cucumber juice, fresh lemon juice and gently stir.
Garnish with a lemon wedge, cucumber swirl or cherry through a stick
*Combine 1 cup sugar and 1 cup water, heat in a saucepan over medium heat. Stir until sugar is dissolved. Do not boil. Cool, transfer syrup to a bottle/jar. The syrup can be refrigerated for up to a month.
